We source as much as we can locally. We are fortunate to be in the Central Coast, NSW – a farming area.
We think it’s important to reduce food waste so we also buy “less than perfect” produce.
I’m a beekeeper so I have the luxury of adding honey to some recipes.
We use ripe seasonal fruit which has plenty of its own natural sugars.
Apples and pears are used to add both sweetness and thickening as well as dates, sultanas and raisins.
